Capitol's Beef noodles

Evening, when the weather cools down, mamma liked to take us roam the town, as we walked pass the Capitol theater, sometime we had a glass of herbal tea outside the cinema, glasses containing winter melon tea and bamboo cane water covered with glass lids, and the horrible black drink named 'Wong Lo Kat'. . .
As we strolled pass the ‘Look Look’ stalls (seafood string up like Satay put into boiling water to cook), mamma would stop at a beef noodles stalls, and we would find a table to sit down and had ourselves satisfied, smooth rice noodles and tender beef sirloin, doused with fragrant soup plus the parsley and spring onion, so tasty that our tongue rolled up, but I always left the offal in the bowl, didn’t  know how to appreciate it.
The noodle man with one side of his ear rolled up, his two wearing 'Ma Chai Sum' daughter were his good helpers.  We gave them a nickname called 'wooden beauty' because we seldom see them smile. Father and daughters just busy greeting the diners.
